100% Individual Processing

You will receive ALL of the edible portion of the meat that you deliver, and you will ONLY ever receive meat from the animal you deliver (plus any added beef or pork fat that you have ordered). Your meat will never be mixed with or contaminated by any other meat. This extra level of care does significantly decrease general processing efficiency, but we believe it is extremely important in ensuring the highest quality end product.

Right to Refusal

Any delivery of meat that has been negligently handled WILL be refused at the door. To ensure you avoid this inconvenience, we suggest you read carefully the Hunter Info tab. We have the right to refuse delivery of meat for any reason, including but not limited to: condition of the meat, hunter/outfitter negligence, handling size, limited space or working time, concerns over CWD, and failure to produce a valid hunting license or tag.

Order Pickup & Shipping

Clients will be notified by phone or text once processing has been completed, and fulfilled orders must be picked up in-person within 3 business days, unless prior arrangements have been made. Frozen storage for completed orders beyond 3 days will be charged at a rate of $10/day for one week, and $20/day beyond. We DO NOT offer shipping. Hunters who live out of state may elect to pay a $200 48-hour rush fee, otherwise it is encouraged they have a local friend pickup their order and ship it directly.

Cooling and dry aging

Our ability to offer cold-storage and dry-aging is based on space, availability, and condition of the meat. For clients who plan to process their own meat at home, cold-storage and dry-aging may be available for $20/day. During the peak season when space is limited, preference will be given to clients who will be utilizing our processing service. Every processing delivery will hang (dry-age) for a minimum of 5-7 days before processing begins. This is not a very common practice among busy game-processors, but we believe it is extremely important to the quality of the end product. In most circumstances, additional dry-aging may be purchased for $100/week. For the entire time that we are in possession of your harvest, we guarantee that it will be stored below 40°F in a temperature and humidity controlled unit with an exceptionally high standard of cleanliness.

Grinding & packing services

For home processors that do not own a meat grinder, we will happily grind their clean trimmed meat for burger or sausage. A processing and packaging fee of $2/lb. will be charged, in addition to the costs of added fat and sausage making.

Bone-in cuts

Clients who are able to deliver the whole carcass may elect bone-in steak cuts for a flat fee of $100 per animal. For cervid animals (deer, elk, moose) spineless chops may be an option, but no bone-in cuts will intersect the spinal tissue for concerns of CWD. Pronghorn, sheep, and younger cervid animals (fawns) without risk of CWD have more options for bone-in products.

Specialty Products

We offer a selection of specialty add-on products for clients that would like to diversify their freezers beyond our basic (bull still fully customized) meat processing. Sausage will be included in the raw-meat pickup (1.5-2 weeks after drop-off). Brined/Smoked products will require a second pickup (in January or February). Meat designated for these products will be set aside during processing and stored in our freezer until business levels allow time for these products. Of course, these products are still made 100% individually, and meats from different clients will never be mixed. Visit the Hunter Info tab for current pricing.

Chronic Wasting Disease (CWD)

Chronic Wasting Disease (CWD) is a serious concern of ours. It has the potential to destroy the hunting tradition in the US if ever it spreads to humans. Our procedures are designed to limit the possibility of spread while still providing an exceptional service. The spinal column of cervid animals will be kept in-tact (as best possible) and properly disposed of. Animals suspected to have CWD should not be brought in for processing, and confirmed cases should not be consumed. Every client, whether in Idaho or Wyoming, should follow their State’s regulations and protocols and submit lymph-node samples for free testing. Freezing whole quarters is a great way to save on processing costs before results are received. Quarters may be delivered frozen and thawed on site. We are not responsible for loss of meat due to positive CWD tests. Clients are still responsible for picking up and paying in whole for processing that has been completed. Wyoming hunters may not cross state lines into Idaho with any spinal tissue from a cervid animal. Fortunately the nature of individual processing means that any cross contamination between one client’s harvest and another is extremely unlikely.
