This business actually started many years ago, with a few big elk quarters on our kitchen table and no clue what to do with them. A curiosity in butchering, a drive towards improvement, a passion for hunting, cooking and eating good meat, and a dozen more successful hunts under our belts drove me to seek out an apprenticeship. A couple years behind the butcher case at Sweet Cheeks Meats in Jackson, WY answered a lot of my questions. In addition to learning different ways to cut up even larger animals cleaner and faster, I also learned 1,001 different ways to cook them; which cuts are best for searing, stewing, smoking, braising, marinating, roasting, curing, steaming, slicing, grinding or just eating plain raw with a sprinkle of kosher salt. Perhaps most importantly, I learned through my time at Sweet Cheeks what people want from meat (something they often don’t know themselves) and how to coax that information out of them.
The land surrounding the Tetons is abundant with healthy and delicious wild game, and the community that subsists by responsibly harvesting them now has a processing option with an unmatched focus on quality. Highland Meat Harvest is here to serve hunters who have the highest respect for the animal and it’s sacrifice, a passion for cooking and eating organic wild meat, and a desire to share their hard-earned bounty.
This IS NOT AND WILL NEVER BE a fast and cheap cut shop. We limit ourselves to a small number of animals each week, all so that your animal can be processed 100% individually, meaning ALL of the meat from your animal and ONLY the meat from your animal is delivered in every product to you. Our commitment to quality means we spend more time on each animal, but we believe that the product speaks for itself. We personally guarantee that you will be pleased after a year of enjoying the harvest in your freezer, and sharing it with pride among your most deserving family and friends.
